Gingerbread - two 15th C Cookery books by Thomas Austin 1888 (M&H - can I get your document to put here?)

3 Herb Tarts - original recipe using recipes 106 and 186 from Http://users.iafrica.com/m/me/melisant/cook/german.htm and recipes 106, 133, 139 and 176 from Http://www.daviddfriedman.com/Medieval/Cookbooks/Sabrina_Welserin.html

Loseyns - From Forme of Cury: Regarding choice of cheese. THe recipe seems to call for rather a lot od cheese and also contains broth. Therefore, the cheese cant be too salty and should not compete too hard with the flavour of the broth. As the recip calls for the cheese to be grated, it can not be too soft.

I tried cottage cheese and it works quite well, but is probably not the correct cheese.

The recipe calls for "cheese ruayn". There is mention on the internet that, in the Tart de Brie recipe which also uses cheese ruayn, Pont-l'Eveque would be a good substitute. The white rind of this cheese would be consistent witht the "roan", type of horse's coat with a mixture of white cand coloured hair. As I could not obtan Pont-l'Eveque, I have used Camembert.

Cock-a-leekie Soup - Traditional scottish chicken leek soup.
